Fresh Free-Range Turkeys - We have both Broad-Breasted (a traditional white broad-breasted Turkey) AND Classic Heritage Turkey (looks more like a wild Turkey. Breasts are smaller, with more dark meat).  These are raised by our friends at Green Hill Farm in Chatham County. All of these turkeys are allowed to roam freely outdoors on green pasture with no animal by-products,  anti-biotics or medication in their feed. They are processed humanly with absolutely no type of preservatives or chemicals.  They are the real deal.  We are processing these turkeys on Sunday and Monday and offering them fresh for pick up on Tuesday and Wednesday.  These are delicious brined and you do need to pay attention to the drippings, as they are not as fat as grocery store turkeys. They should be cooked covered initially and often need a bit more basting, but the effort is worth the taste. And no, they do not come with a pop-up timer.

Duck - We have free-range Muscovy Duck. They were raised at Fern Hill Farm in Hillsborough. The Muscovy duck meat is dark and lean and looks more like roast beef and most duck. These ducks have been allowed to roam and fly freely, so brining and slow cooking with liquid is always a good idea. Quantities are limited.

Ham - We have the most delicious smoked and cured hams. These were raised at Woodcrest Farm in Hillsborough in collaboration with Fern Hill Farm. The secret to cooking these hams is slowly and with liquid. They are not as pink as grocery store hams (the pink color comes from chemical processing). There are no nitrates or any other chemicals used. They are cured with brown sugar and salt and smoked with wood from a tree. Nothing else. They are incredibly delicious.

Organic Vegetables - We will also have an assortment of seasonal organic vegetables, brocoli, turnips, turnip greens, sweet potatoes, mixed greens, etc. Hard to know what we have, but whatever it is..it is completely organic and delicious.

Free-Range Chicken, Farm-Raised Pork and Grass-fed Beef - We have all cuts of beef at the moment and by mid-November, we will have all cuts of pork and chicken. Order forms are available at www.WoodcrestFarmNC.com

Eggs - Our hens are a little unpredictable with the start and stop of cold weather, but we do have chicken eggs available. Our ducks have not been very productive lately, but we do have a small supply. Let us know if you would like any

If pick up on Tuesday at LSRC doesn't work, then just let us know and we will arrange something.

Thanks
